Chicken Broth
1 cup (240ml) - as simplified tonkotsu base
Soy Sauce
2 tablespoons (30ml)
Bacon
4 slices - substitute for roast pork
Spinach
2 cups (60g) fresh leaves
Nori Seaweed
1 sheet, torn into pieces
Minced Garlic
1 teaspoon (5g) pre-minced (from jar)
Ginger
1 teaspoon (5g) fresh, grated
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. In a small pan, cook the bacon slices until crispy. Set aside on a paper towel to drain excess grease.
  2. In a pot, bring 2 cups of water to a boil.
  3. Add the chicken broth, which will serve as our simplified tonkotsu base.
  4. Add pre-minced garlic, grated ginger, and soy sauce to create the characteristic Yokohama-style tonkotsu soy sauce flavor.
  5. Simmer the broth for 5 minutes to allow the flavors to meld together.
  6. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  7. In the same pot used for noodles, quickly blanch the spinach for 30 seconds, then drain.
  8. Place cooked noodles in a bowl and ladle the hot broth over them.
  9. Top with crispy bacon slices, blanched spinach, and pieces of torn seaweed sheets.
  10. Serve immediately while hot.
