Ramen Noodles
1 package (85g) - discard seasoning packet
Bacon
6 slices (120g), cut into 1-inch pieces
Cabbage
1 cup (70g) thinly sliced
Onion
1/4 medium (40g), thinly sliced
Carrot
1/2 medium (30g), julienned or thinly sliced
Green Onions
2 stalks, chopped (separate white and green parts)
Soy Sauce
1 tablespoon (15ml)
Oyster Sauce
2 tablespoons (30ml)
Sesame Oil
2 teaspoons (10ml), divided
Aonori
1 tablespoon (3g) dried seaweed flakes, for garnish
Pickled Ginger
1 tablespoon (15g) pickled red ginger (beni-shoga)
Bonito Flakes
1 tablespoon (2g) katsuobushi

Instructions

  1. Prepare the vegetables: Thinly slice the cabbage, onion, and carrots. Chop the green onions, separating the white and green parts.
  2. Heat a large skillet or wok over medium-high heat. Add half of the sesame oil.
  3. Add the bacon to the skillet and cook until it begins to crisp but is still slightly chewy, about 2-3 minutes. Remove and set aside.
  4. In the same skillet, add the remaining sesame oil. Add the white parts of green onions and onions, stir-frying for 1 minute.
  5. Add carrots and cabbage to the skillet and stir-fry for 2-3 minutes until the vegetables begin to soften but still retain some crispness.
  6. In a small bowl, mix together oyster sauce and soy sauce.
  7. Meanwhile, cook the ramen noodles according to package directions, reducing the cooking time by 1 minute to keep them slightly firm. Drain well.
  8. Add the noodles to the skillet with the vegetables. Pour the oyster sauce mixture over the noodles and vegetables.
  9. Add the cooked bacon back to the skillet and toss everything together to coat evenly with the sauce. Cook for 1-2 more minutes, allowing the flavors to meld.
  10. Transfer to a serving plate or bowl. Garnish with the green parts of green onions, crumbled bonito flakes, and aonori (seaweed flakes). Add a small pile of pickled red ginger on the side.
  11. Serve immediately while hot.
