Chicken Broth
1 cup (8 fl oz) - for broth base
Soy Sauce
3 tablespoons (45ml)
Bacon
8 slices - for protein and rendering pork back fat
Green Onions
3 stalks, chopped
Bamboo Shoots
1/2 cup (120ml) canned, drained
Ramen Noodles
1 package (3 oz) - discard seasoning packet

Instructions

  1. In a small pan, cook 6 bacon slices until crispy to render fat. Set aside on a paper towel to drain excess grease and reserve the rendered fat.
  2. In a pot, bring 2 cups of water to a boil.
  3. Add chicken broth and soy sauce to create the soy sauce-based broth characteristic of Tsubame-style ramen.
  4. Add 1 tablespoon of the rendered bacon fat to create the rich pork back fat flavor.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  6. Place cooked noodles in a bowl and ladle the hot broth over them.
  7. Cook the remaining 2 bacon slices until just done but not too crispy. Slice into pieces.
  8. Top with the sliced bacon, chopped green onions, and drained canned bamboo shoots.
  9. For an authentic touch, drizzle a small amount of additional rendered bacon fat on top.
  10. Serve immediately while hot.
