Beef Broth
2 cups (480ml)
Beef Sirloin
4 ounces (113g), thinly sliced
Soy Sauce
2 tablespoons (30ml), divided
Sugar
1 teaspoon (5g) - for stewing beef
Egg
1 large egg - for soft-boiled egg topping
Bamboo Shoots
1/4 cup (60ml) canned, drained
Bean Sprouts
1/2 cup (50g) fresh
Scallions
2 stalks (green onions), chopped
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. For stewed beef slices: Season beef slices with salt and pepper. In a small pot, combine beef slices, 1 cup water, 1 tablespoon soy sauce, and 1 teaspoon sugar. Bring to a simmer and cook for 15-20 minutes until tender. Remove beef and set aside, reserving the cooking liquid.
  2. For the beef broth: In a medium pot, combine beef broth with reserved beef cooking liquid and bring to a simmer.
  3. Add 1 tablespoon soy sauce to enhance the beef flavor.
  4. Prepare a soft-boiled egg: Bring water to a boil in a small pot. Gently add the egg and cook for 6-7 minutes. Remove, cool in ice water, peel and cut in half.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  6. In the same pot used for noodles, quickly blanch the bean sprouts for 30 seconds, then drain.
  7. Place cooked noodles in a bowl and ladle the hot beef broth over them.
  8. Arrange the toppings on the noodles: stewed beef slices, soft-boiled egg half, drained canned bamboo shoots, and blanched bean sprouts.
  9. Garnish with chopped scallions.
  10. Serve immediately while hot.
