Chicken Broth
1 cup (240ml)
Soy Sauce
3 tablespoons (45ml), divided
Ground Pork
4 ounces (113g)
Minced Garlic
1 teaspoon (5g)
Cabbage
1 cup (70g) green cabbage, thinly sliced
Chives
2 tablespoons (6g) fresh, chopped
Pickled Onions
2 tablespoons (30g) pickled onions or leeks
Chili Paste
1 teaspoon (5g) sambal oelek or similar
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. Prepare the ground pork: In a skillet over medium heat, cook the ground pork until browned. Add minced garlic and 1 tablespoon soy sauce. Cook for another 2 minutes until fragrant and set aside.
  2. In a medium pot, bring 2 cups of water to a boil.
  3. Add chicken broth and soy sauce to create a savory soy-based broth.
  4. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  5. While the noodles cook, thinly slice the cabbage.
  6. In a separate pan, quickly sauté the sliced cabbage until just wilted, about 1-2 minutes.
  7. Finely chop the chives.
  8. Place cooked noodles in a bowl and ladle the hot broth over them.
  9. Top with the sautéed ground pork, wilted cabbage, chopped chives, and pickled leeks (or pickled onions as a substitute).
  10. Add a small spoonful of chili paste on top or to the side for diners to add to taste.
  11. Serve immediately while hot.
