Chicken Broth
1 cup (240ml)
Ground Pork
4 ounces (113g)
Minced Garlic
1 teaspoon (5g)
Ground Ginger
1/2 teaspoon (2g)
Soy Sauce
2 tablespoons (30ml), divided
Tahini (Sesame Paste)
1 tablespoon (15g)
Hot Bean Sauce
1 teaspoon (5g) doubanjiang
Chili Oil
1 teaspoon (5ml)
Bean Sprouts
1/2 cup (50g) fresh
Bok Choy
1 baby bok choy (85g), leaves separated
Egg
1 large egg (for soft-boiled topping)
Sesame Seeds
1 teaspoon (5g)
Green Onion
1 stalk, chopped
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. Prepare the spiced ground pork: In a skillet over medium heat, cook the ground pork until browned. Add minced garlic, ground ginger, and 1 tablespoon soy sauce. Cook for another 2 minutes and set aside.
  2. Prepare a soft-boiled egg: Bring water to a boil in a small pot. Gently add the egg and cook for 6-7 minutes. Remove, cool in ice water, peel and cut in half.
  3. In a medium pot, bring 2 cups of water to a boil. Add the chicken broth.
  4. Add 1 tablespoon soy sauce and 1 tablespoon sesame paste (tahini) to the broth. Stir well to dissolve.
  5. Add 1 teaspoon hot bean sauce (doubanjiang) to the broth for spice and flavor.
  6. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  7. While noodles cook, blanch the bean sprouts and bok choy in boiling water for 1 minute, then drain.
  8. Place cooked noodles in a bowl and ladle the hot broth over them.
  9. Top with the spiced ground pork, soft-boiled egg half, blanched bean sprouts and bok choy.
  10. Garnish with sesame seeds, a drizzle of chili oil, and chopped green onions.
  11. Serve immediately while hot.
