Chicken Broth
1 cup (240ml) - for broth base
Fish Sauce
1 teaspoon (5ml) - substitute for dashi
Soy Sauce
2 tablespoons (30ml)
Bacon
4 slices - substitute for roast pork and for fat
Bacon Fat
1 tablespoon (15ml) rendered - for authentic flavor
Bamboo Shoots
1/4 cup (60ml) canned, drained
Green Onion
2 stalks, chopped
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. In a skillet, cook bacon slices until crispy. Set aside on paper towels, but reserve 1 tablespoon of the rendered bacon fat.
  2. In a pot, bring 2 cups of water to a boil.
  3. Add the chicken broth and fish sauce (as a simplified substitute for dashi/dried fish stock). Stir well to combine.
  4. Add soy sauce and the reserved bacon fat to create the rich, fatty broth characteristic of Onomichi-style ramen.
  5. Allow the broth to simmer for 5 minutes to meld the flavors.
  6. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  7. Place cooked noodles in a bowl and ladle the hot broth over them.
  8. Top with crispy bacon slices (as a substitute for traditional roast pork), drained canned bamboo shoots, and chopped green onions.
  9. For authentic Onomichi style, drizzle a small amount of additional melted bacon fat or neutral oil on top to create a layer of fat on the surface.
  10. Serve immediately while hot.
