Ground Pork

Chili Garlic Sauce
1 tablespoon (15g)

Chicken Broth
1 cup (240ml) - for broth base
Soy Sauce
2 tablespoons (30ml) - divided
Chives
2 tablespoons (10g) fresh, chopped
Pickled Vegetables
2 tablespoons (30g) - sauerkraut or relish
Hot Peppers
1 jalapeño or serrano, thinly sliced
Green Onion
2 stalks, chopped
Chili Oil
1 teaspoon (5ml) - optional
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. In a skillet, brown the ground pork over medium-high heat. Break it into small pieces as it cooks.
  2. Add the garlic, ginger, and red pepper flakes to the pork. Sauté for 1 minute until fragrant.
  3. Add the soy sauce, chili garlic sauce, and sugar to the pork mixture. Stir and cook for another 2-3 minutes until the liquid is mostly absorbed and the pork is flavorful. Set aside.
  4. In a pot, bring 2 cups of water to a boil. Add the chicken broth and soy sauce to create the broth base. Simmer for 5 minutes.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  6. Place cooked noodles in a bowl and ladle the hot broth over them.
  7. Top with the spicy ground pork mixture, chopped chives, sliced jalapeño or serrano peppers, chopped pickled vegetables, and chopped green onions.
  8. For extra authenticity, drizzle with a small amount of chili oil.
  9. Serve immediately while hot.
