Ingredients

Chicken Broth
1 cup (240ml) - for rich broth base
Soy Sauce
3 tablespoons (45ml)
Chili Bean Paste
1 tablespoon (15g) doubanjiang
Minced Garlic
1 teaspoon (5g)
Bacon
3 slices - substitute for traditional chashu pork
Green Onion
2 stalks, chopped
Chives
2 tablespoons (10g) fresh, chopped
Bamboo Shoots
1/4 cup (60ml) canned, drained
Sesame Oil
1/2 teaspoon (2.5ml) - for finishing
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. In a pot, bring 2 cups of water to a boil.
  2. Add the chicken broth, soy sauce, and chili bean paste. Stir well to combine.
  3. Add minced garlic and simmer for 5 minutes to create a rich, robust broth characteristic of Kyoto kotteri-style ramen.
  4. In a small pan, cook bacon slices until crispy (as a convenient substitute for traditional chashu pork). Set aside on paper towels to drain excess fat.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  6. Place cooked noodles in a bowl and ladle the hot broth over them.
  7. Top with crispy bacon slices, chopped green onions, chopped chives, drained canned bamboo shoots, and a small additional dollop of chili bean paste (optional, for extra spice).
  8. For an authentic touch, add a small drizzle of sesame oil on top.
  9. Serve immediately while hot.
