Chicken Broth
1 cup (240ml) - for soy-based broth
Soy Sauce
2 tablespoons (30ml)
Bacon
3 slices - substitute for traditional chashu pork
Bamboo Shoots
1/4 cup (60ml) canned, drained
Green Onion
2 stalks, chopped
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. In a pot, bring 2 cups of water to a boil.
  2. Add the chicken broth and soy sauce to create a light, clear soy-based broth characteristic of Kitakata ramen.
  3. Simmer the broth for 5 minutes to develop flavor.
  4. In a small pan, cook the bacon slices until crispy. Set aside on a paper towel to drain excess grease.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well. Kitakata ramen typically has thick, curly noodles, so if available, choose a thicker style of instant ramen.
  6. Drain and rinse the canned bamboo shoots.
  7. To assemble: Place cooked noodles in a bowl and ladle the hot soy-based broth over them.
  8. Top with the crispy bacon slices (as a substitute for traditional roast pork), drained bamboo shoots, and chopped green onions.
  9. Serve immediately while hot.
