Ingredients

Chicken Broth
1 cup (240ml) - for broth base
Soy Sauce
2 tablespoons (30ml)
Minced Garlic
1 teaspoon (5g)
Sesame Oil
1/2 teaspoon (2.5ml)
Rotisserie Chicken
4 ounces (113g) shredded
Bamboo Shoots
1/4 cup (60ml) canned, drained
Chives
2 tablespoons (6g) fresh, chopped
Ramen Noodles
1 package (85g) - discard seasoning packet
Egg (Optional)
1 large egg for soft-boiled topping

Instructions

  1. In a pot, bring 2 cups of water to a boil.
  2. Add the chicken broth and soy sauce to create a flavorful soy-based broth.
  3. Stir in the pre-minced garlic and a dash of sesame oil to enhance the flavor. Simmer for 5 minutes.
  4. If using a store-bought rotisserie chicken, remove the meat from bones and shred about 4 ounces for the ramen. Slice into bite-sized pieces.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  6. Drain and rinse the canned bamboo shoots.
  7. To assemble: Place cooked noodles in a bowl and ladle the hot soy-based broth over them.
  8. Top with the shredded roast chicken, drained bamboo shoots, and chopped chives.
  9. Optional: Add a soft-boiled egg (cook for 6-7 minutes, then peel and slice in half) for additional richness.
  10. Serve immediately while hot.
