Pork Bone Broth
1 cup (240ml) or tonkotsu-style broth
Chicken Broth
1 cup (8 fl oz) (substitute if pork bone broth unavailable)
White Miso Paste
1 tablespoon (15g) (to enrich the broth)
Bacon
3 slices (substitute for roast pork)
Pickled Red Ginger
1 tablespoon (15g) (beni-shoga)
Garlic
1 small clove (5g), minced or thinly sliced raw
Green Onions
2 stalks, finely chopped
Roasted Sesame Seeds
1 teaspoon (5g)
Ramen
1 pack (85g) - discard seasoning packet

Instructions

  1. In a small pan, cook the bacon slices until crispy. Set aside on a paper towel to drain excess grease.
  2. In a pot, bring 2 cups of water to a boil.
  3. Add the pork bone broth (or chicken broth for a lighter substitute) and stir well.
  4. Stir in 1 tablespoon of miso paste to enrich the broth and simulate the rich tonkotsu flavor.
  5. In a separate pot, cook the ramen noodles according to package directions, then drain well. For Hakata-style authenticity, cook them slightly firm (al dente).
  6. Place cooked noodles in a bowl and ladle the hot broth over them.
  7. Top with crispy bacon slices, chopped green onions, a small pile of pickled ginger, and a sprinkling of roasted sesame seeds.
  8. Add a small clove of minced raw garlic on the side for diners to add to taste (this is classic Hakata style).
  9. Serve immediately while hot.
