Chicken Broth
2 cups (1 pint)
Soy Sauce
3 tablespoons (45ml)
Bacon
6 slices
Green Onions
3 stalks, chopped
Bamboo Shoots
1/2 cup (120ml), canned and drained
Minced Garlic
2 teaspoons (10g)
Sesame Oil
1 tablespoon (15ml), plus extra for topping
Ramen Noodles
1 package (85g) - discard seasoning packet

Instructions

  1. In a small pan, cook the bacon slices until crispy. Set aside on a paper towel to drain excess grease.
  2. In a pot, bring 4 cups of water to a boil.
  3. Add the chicken broth and stir well.
  4. Add soy sauce and minced garlic to create the tonkotsu soy sauce-based broth.
  5. Stir in a small amount of sesame oil to add richness to the broth.
  6. In a separate pot, cook the ramen noodles according to package directions, then drain well.
  7. Place cooked noodles in bowls and ladle the hot broth over them.
  8. Top with crispy bacon slices, chopped green onions, and drained canned bamboo shoots.
  9. For authenticity, add a small drizzle of additional sesame oil on top to create a layer of grease, characteristic of Asahikawa ramen.
  10. Serve immediately while hot.
